KACHORI

Kachori is yet another one of those Indian Chaats that is appealing- so crunchy.A deep fried pastry snack with onions,green peas and few Indian spices stuffed into it.Very delicate chaat to prepare while filling the veggies,has to be cooked on low flame.Indeed kachoris are so difficult to resist,the best combination for me is tangy tamarind sauce.





Ingredients:  makes 10 kachori's

For the dough
Maida(All purpose flour) -- 2 cups
Salt -- 1/4 tsp
Ghee--2 Tbsps
Water as needed.

For the stuffing
Onion -- 1 large (finely chopped)
Frozen Green Peas 1/4 Cup
Cumin seeds - 1/4 Tsp
Crushed Ginger-Garlic Paste -- 1 Tsp
Coriander Powder -- 1/2 Tsp
Chilli Powder -- 1 1/2 tsp
Cooking Oil -- 1 Tbsp
Salt -- to taste
Chopped Cilantro

Method:

1. In a bowl add water little by little with All Purpose Flour,salt and butter,to a bit
    semi- stiff dough.Keep aside atleast for half hour.


2. Heat oil in a pan,add cumin seeds,g&g paste and onions.Saute them fir couple of
    minutes to transculent.Add the spice powders with salt,finally add the frozen
    green peas and cilantro.


3. Equally divide the dough into approximate 10 to 12 medium lemon size balls.
    Make like cup size from each dough,and stuff about just a tsp of the cooked
    onions.Gently cover the dough by all sides or you can just roll them with the
    help of rolling pin.Make the the base of dough is bit thicker than the edges,
    Since the stuffing should not spill out.Seal all the edges.




4. Drop them thoroughly in a heated oil,turn them upside down to crispy golden
    brown.Deep fry them on a low flame.
